Pecan Crusted Trout

  • 1 cup toasted pecans, finely chopped
  • 1 1/2 cups bread crumbs
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1 tablespoon rosemary, finely chopped
  • 4 trout fillets
  • 1 stick butter, melted

Preheat oven to 450 degrees F. Stir dry ingredients together in a bowl. Brush each trout fillet with melted butter. Coat each fillet with the pecan crust, pressing the coating into each fillet so it sticks. Brush a cookie sheet with melted butter. Place each fillet onto the prepared sheet. Bake at 450 for 10-12 minutes or until the trout is flaky.
